From Elizabeth Woolley, your Guide to Type 2 Diabetes
Happy Monday! I hope you enjoy starting your week learning about Kale. I'm also throwing in a recipe for roasted pepitas with a flavor that will make you feel like there is a fireworks show happening in your mouth. Finally, I am sharing some interesting information on where the phrase "sugar diabetes" comes from.

The Benefits of Kale
Have you tried kale? You know, it's that weird prehistoric-looking green in the produce section. Learn how this superfood can benefit your diabetes management as well as your overall health.

Baked Kale Chips
After you learn about the spectacular benefits of kale, why not give this easy recipe a try. Bet you didn't know kale could be turned into a slightly salty, delicately oily, crispy, crunchy snack.

What is Sugar Diabetes?
Have you ever heard someone say they have "sugar diabetes." It's possible you might have even had a doctor tell you that you have it. I have heard this phrase a few times, and I have wondered for a while what it meant. I found the answer, and it's a pretty interesting one at that.

Roasted Pepitas
I just made this recently and enjoyed it immensely. So I'm sharing the recipe with you again. This recipe has amazing flavor - sweet (pinch of sugar), sour (lime juice), spicy (red pepper flakes and garlic), and salty. The flavors explode in your mouth. If you don't have shelled pumpkin seeds available, try it with shelled sunflower seeds.
