From Fiona Haynes, your Guide to Low Fat Cooking

Is fat back? I think we know the answer to this. It is. Up to a point. But that doesn't mean you should ditch a way of eating that may be working perfectly well for you. No gallbladder, or gallbladder disease? Fatty liver disease? You have to eat low fat. Does eating low fat help you, personally, manage your weight? Are you testament to Dr. Ornish's very low fat diet and have reversed the symptoms of heart disease by eating this way? Then stay on this path.

But if eating low fat causes you to gorge on sugary, processed foods and leaves you feeling tired and sluggish, and if your triglycerides and LDL cholesterol are through the roof, then your whole diet needs an overhaul.

If whatever you're doing helps you achieve your goals or prevents you from being sick, then you have nothing to fear from the latest headlines.

Is Fat Back?
In the world of nutrition, confusion reigns. This is nothing new. Conventional wisdom swings from one thing to another, and we’re left with more questions than answers: Is fat good for you or bad for you?

Fat Fallacies
There's an awful lot of misinformation about dietary fats, and just because I write about low-fat cooking doesn't mean I believe we should eliminate fat from our diet. Far from it.

Why Low Fat Doesn't Mean No Fat
You might want to eat low fat in principle, but perhaps you're worried that you'll mourn the loss of certain favorite foods or that you might have to give up your favorite ethnic cuisine. The good news is you don't have to. There's no reason to ban things outright. If you love cheese, or Chinese, you can still have it—just have less of it, or choose your dish wisely.

Eating low fat remains a perfectly good dietary choice so long as we understand that replacing fat with nutritionally empty carbs is not going to help you reach your weight-loss goals or make you healthier.
