It's not the grim reapers or witches I fear at Halloween, but the abundance of candy. If, like me, you have a weakness for all those cute little fun-size bars and mini bags of chocolate candies, then you need a strategy to stay on track.

A Slimmed-Down Halloween
Halloween is pretty scary if you're trying to eat low fat, or trying to limit your kids' candy intake. Tempted by all sorts of sweet, sugary, fat-filled treats, it's hard to stay on track with any kind of healthy eating plan. If you're trying to avoid temptation, or simply trying to control how much fat and sugar your kids consume, I have some ideas for happy yet healthier Halloween.

Roasted Beet and Carrot Soup
The earthiness of golden beets from the farmers market combines beautifully with the relative sweetness of carrots in this delicious fall soup. Roasting the vegetables adds a depth to the flavor, so don't be tempted to skip that part in favor of simply boiling and simmering.

Pumpkin Apple Muffins
It's not hard to make a lower fat muffin because ingredients such as fruit purees or canned pumpkin make great fat substitutes. These low fat pumpkin apple muffins, which contain both canned pumpkin and applesauce, make a great snack or brunch item.

White Turkey Chili
This white turkey chili makes a hearty, wholesome meal on a cold night. Serve with whole-grain rice or with some baked tortilla chips and a small amount of reduced-fat sharp cheese.
