From Fiona Haynes, your Guide to Low Fat Cooking
In asking the question, red or white, I'm not referring to wine but to pork. Pork looks white when cooked and is touted as a white meat, thanks to a successful marketing campaign. But how is it really classified, and does it make a difference?

The Other Red Meat?
Thanks to a successful marketing campaign by the pork industry, we almost reflexively think of pork as "the other white meat." Technically, however, pork is still classified as a red meat because it is a livestock product, like beef, lamb and veal, and all livestock are classed as red meat.
