I love cooking fish and seafood for dinner (I'm making Shrimp Scampi tonight). Fish and seafood cooks quickly, is delicious, and tends to have nutrients it's difficult to get in other foods, such as omega-3 fatty acids. Right now, salmon season just started where I live which always makes me happy, because it means having access to super-fresh wild salmon. Have a good week, and try adding some fish to your diet!
