Lasagna isn't really a low fat dish but there plenty of ways to make it considerably lighter. This week I share four lower-fat lasagnas to see you through the rest of this long, cold winter. And if you should tire of lasagna, I have some other lightened comfort foods for you to enjoy.

 


Lower-Fat Lasagna
This meatless, low-fat lasagna is chock full of colorful vegetables, making this a healthy and nutritious supper dish. You can even prepare this vegetable lasagna ahead of time and refrigerate it until you're ready to cook. If you do, let the lasagna stand at room temperature for 20-30 minutes before placing it in the oven.

 


Light and Creamy Mushroom Lasagna
A light yet creamy meatless lasagna filled with mushrooms, low-fat ricotta cheese, spinach, and tomato sauce, makes a welcome meal for a crowd. Filling and delicious, you won't miss the meat. You can cut fat further by making one of the ricotta cheese tubs listed a fat free one. To save time in the evening, prepare and assemble the lasagna ahead of time, and bake later.

 


Low Fat Southwestern-style Lasagna
Sometimes when you can't decide between one dish and another, you are able to combine the two. In this case I was trying to figure out whether to make chili or lasagna. This Southwestern-style lasagna means I can essentially enjoy both.

 


Chicken and Zucchini Lasagna
Lean ground chicken is a great alternative to beef in lasagna, and if you can't find ground chicken you can always use lean ground turkey instead.
