Happy Spring and happy Nutrition Month! I feel like I have whiplash from watching this year go by so quickly. You? February brought a fantastic opportunity for me to serve as the pro bono nutritionist for the Plastiki crew, which in part inspired this month's article: Prepping the Perfect Pantry {or, A Peek into a Holistic Nutritionist's Pantry}. The Plastiki is a 60-foot catamaran made from reclaimed plastic bottles. It will sail from San Francisco to Sydney this month to bring attention to the world's wasteful use of resources as well as to the Great Pacific Garbage Patch, estimated to be about twice the size of Texas - the world's largest "land"fill. After a sold-out March 1st workshop on The Food-Mood Connection, I'm busy preparing for the hands-on cooking workshop, Eat Smart, Work Smart: A Culinary Roadmap for the Busy Professional / Entrepreneur on April 1st, where we'll be exploring delicious nutrition tips and recipes for taming your stress and fueling your life. Simple and nutritious, it's a delicious dish you can prepare in a hurry, drawing on ingredients already in your (perfect) pantry. On a personal note: When Spring sprung forth early this year in SF, I resumed my workouts with a vengeance after a couple of months spent in physical, um,... hibernation? Right now, my body is craving yoga 2-3 times a week and the Bar Method (ow!) 1-2 times a week, with hiking once a week. Bikini body, here I come! I can't tell you how GOOD it feels to be ABLE to do these workouts when just 3 years ago I could barely walk. Fellow autoimmune peeps - it's possible, please know that, even if it doesn't feel like it right now.
