Eggs for Spring | During the winter, I find that it's harder to find the eggs I usually buy -- pastured eggs where the hens are allowed to run around eating what hens are supposed to eat. The hens are happier, the eggs are more nutritious, and everyone wins. During the winter when there is less light, hens who aren't raised with artificial light don't lay many eggs. But with the return of spring, there is a return of the light, and a return of great eggs! Cook some up for a weekend breakfast or brunch, and celebrate spring!
