Going Green
St. Patrick's Day is almost more of a celebration here in the United States than it is in Ireland. School children decorate their classrooms, wear as much green as possible and enjoy tales of leprechauns and rainbows with pots of gold at the end. Adults enjoy downing a pint of Guinness or two, or perhaps a shot of whiskey, and indulge in some hearty Irish fare. If you want to enjoy the festivities but take a lighter approach, I have some yummy Irish-themed recipes for you to try. Slainte Mhath!
Irish Soda Bread
Irish Soda Bread requires only a few simple ingredients: flour, baking soda, salt and buttermilk. Throw in a cup of raisins if you like, and some orange zest, too. Traditional Irish Soda Bread is made without these, however, as it was made as a daily bread to accompany meals.

Colcannon
Colcannon is a perfect side dish for St. Patrick's Day. It's basically a mashed potato and cabbage dish, although many variations exist. I like to blend in milk-simmered leeks in this version. Other people swear by kale rather than cabbage, which may be more in keeping with tradition.
