As Fall approaches, I'm getting back in to baking mode, and that means plenty of home-made muffins. I used to enjoy coffee-store muffins until I realized they packed in up to 400 calories, with a scary amount of fat and sugar. The muffins featured in this week's newsletter are still a sweet treat, but they're much kinder to your waistline.

Morning Glory Muffins
These moist and delicious muffins feature shredded carrots, crushed pineapple and raisins. You can add a nutritional boost by replacing up to half the flour with whole-wheat pastry flour, which keeps the muffins tender while adding extra fiber.

Zucchini Muffins
Still trying to find ways to use up zucchini? Try these zucchini muffins, which also feature heart-healthy walnuts. Raisins add a nice fruity touch.

Apple Oatmeal Muffins
These make perfect breakfast muffins. Shredded apples keep these muffins nice and moist. Consider replacing up to half the flour with whole-wheat pastry flour for an extra nutritional boost.

Pear Muffins
Cinnamon, ginger and nutmeg add a nice flavor to these fall-friendly muffins. These muffins are perfect with a cup of fresh-brewed coffee. Enjoy them while they're still warm!
