Enjoy some soup to ward off summer's heat -- cold soup, that is. Whether it's a traditional tomato gazpacho or a cooling melon or cucumber soup, cold soups make a refreshing and nutritious lunch.

Cool as a Cucumber
One of the best ways to cool down in the summer is to eat soup. I'm referring to chilled soup, of course, although plenty of people are happy to slurp their way through hot soup no matter what the season. This cucumber soup is is a great example of a summer soup. It's wonderfully cooling and refreshing, and makes good use of calcium-rich nonfat Greek yogurt.

Melon Mango Soup
Here's a lovely orange-colored soup of melon and mango, which is sweet and refreshing. Be sure to use the ripest fruit you can, and don't forget to wash the melon and mangoes before you cut into them.

Gazpacho
This is the perfect soup for a hot summer's day. Gazpacho is a chilled soup featuring ripe tomatoes and a host of other fresh garden vegetables. Serve with some crusty whole grain bread.
