It was somewhat surprising to my one of my children that some folk choose not to eat turkey on Thanksgiving. Some eat ham, but others don't eat meat at all, of course. Despite knowing some vegetarians, she hadn't really thought too much about what vegetarian families might eat at Thanksgiving. This year, she's about to find out, as we have been invited to a vegetarian Thanksgiving.

 


When Turkey Is Off the Menu
Turkey may be synonymous with Thanksgiving, but not everyone likes turkey, and there are many more who, because they are vegetarian, won't eat turkey. So whatever your reason for being meat-free this Thanksgiving, here are some great suggestions for a turkey-free Thanksgiving.

 


Or When It's Just the Breast
We are a small family, and none of us eats dark meat, so the best option when we have turkey at Thanksgiving is to cook a turkey breast. A turkey breast is easier to cook because you don't have to worry about drying out the breast meat while waiting for the legs to cook.

 


Handling Your Leftovers Safely
Before you start thinking of all the yummy things you can make with your leftover turkey, be sure to handle your leftovers carefully to avoid any possibility of food-borne illness.

Making the Most of Your Turkey Leftovers
If you're going to be eating turkey for two or three days, you really need to have some good ideas for using it. I'm all for a turkey sandwich a couple of days in a row, but there are plenty of other things we can do with it before we push our plates away and say, "Enough!"
