When I first moved to the U.S., I had no idea what a big deal St. Patrick's Day was. My experience was somewhat magnified by the fact that I lived in New York. Obviously in cities like New York, such as Boston and Chicago, St. Patrick's Day is huge, thanks to a large Irish-American presence. Resistance is futile, so unleash your inner Irish and enjoy the food and festivities of this "green" day.

 


Irish Soda Bread
With only a handful of ingredients and no yeast, Irish soda bread is a snap to make. Enjoy this traditional St. Patrick's Day bread with some low-fat spread or enjoy it dunked in the juices of a lean stew or soup.

 


Watercress Soup
Packed with vitamins A, C, and K, and as a great source of potassium, iron, and calcium, watercress packs a lot of punch in its peppery-tasting leaves. Great in salads or in soups, watercress, like arugula and spinach, is a versatile green-leaf vegetable. In this low fat soup, I add the watercress toward the end of cooking to preserve as many nutrients as possible.

 


Lean Beef Stew
Perfect for St. Patrick's Day, this lean beef stew is packed with chunks of colorful, nutritious vegetables, as well as cubes of lean, mineral-rich, high-protein beef.

 


Colcannon
Colcannon is a classic Irish dish made from cabbage and, of course, potatoes. Now, you could switch out cabbage in favor of kale, which would add a nice splash of darker green and a few more nutrients. Either way, it's a delicious side dish to serve with your lean beef stew.
