Hanukkah started on Saturday night, and I hope everyone who celebrates is enjoying the holiday. A couple of years ago a friend sent me information about the "original latkes" which you may find interesting. (I usually make them out of celery root/celariac.) Also Denmark's experiment in taxing fat wasn't too successful, low-carb gifts, and how to keep your nutrition high when carbs are low. Have a great week - Laura

The Original Latkes were Low-Carb!
We often think "real latkes" are made with potatoes but did you know that potatoes, being from the New World, weren't prevalent in Europe until about 200 years ago? Bet you can't guess what the original latkes were made from! I've linked to recipes, as well as to my own low-carb latke ideas.

Denmark Repeals Fat Tax
A year ago, Denmark instated a tax on saturated fat. It didn't go so well.

Make Your Carbs Count
A few years ago I set myself the challenge of creating a series of Low-Carb Menus which had 100% of the daily vitamin and mineral requirements (turned out that Vitamin D and calcium were the ones that I didn't achieve in every case). I used the knowledge I gained from that exercise to compile a list of tips in deciding on your own eating to get the most nutritional bang for the buck, carb-wise.
