The leaves were blowing a little today: yellow ones and orange ones mainly; a sure sign that the start of fall is imminent. Another sure sign of fall's arrival is the abundance of apples at farmers markets and stores, which means applesauce, hot cider, and an excuse to make some apple and date muffins. Apart from my muffin recipe, I'm focusing a bit this week on meatless meals, which will help us cut down on animal fats.

Meatless Mondays (Tuesdays, Wednesdays ...)
It's good for us to go meatless once a week or so, but it shouldn't be an excuse to pull out the boxed mac and cheese. Meatless it may be, but it's not exactly lacking in fat and calories. So here are some ideas that think outside the box (of mac and cheese).

Bean Burritos
Here's another idea for you meat-free days. These yummy bean burritos are a firm family favorite. You can make them mild or spicy, but however you choose to flavor them, you won't miss the meat at all.

Cheap, Low Fat Meals
When money is tight, it makes sense to stock up on some basics and be a little creative. You'd be surprised how meals you can make with what you already have in your pantry. For example, if you have canned tomatoes, chick peas (garbanzo beans), some curry powder and some rice, you have the makings of a delicious low-fat meal right there.
