Most of us don't eat enough fish, and frankly, fish sticks hardly count, since most of the healthy fat in fish is overwhelmed by the unhealthy fat in the coating and the frying pan. So here are some nutritious and delicious fish dishes that might encourage you to make fish a regular fixture in your weekly diet.

Skinny Fish and Chips
Fish and chips needn't be a dietary nightmare. Dispense with the deep fryer and make this leaner, more nutritious version. Halibut is perfect for this recipe as it's a mild-tasting, chunky-textured fish, which makes it a favorite with children and adults alike.

Cod with Lentils
Here's a great nutrient-dense one-pot supper comprising cod fillet, tomatoes and fiber-rich lentils. Enjoy this cod dish with a crisp green salad and perhaps a slice of whole grain bread to mop up the juices.

Salmon and Asparagus in Foil
Steamed to perfection in about 15 minutes, this healthy and nutritious salmon and asparagus dish makes a quick and easy dinner with very little clean up. Serve with whole grain rice or couscous and a squeeze of lemon juice. Sorry about the bad link to this recipe last week.

Stuffed Sole with Parsley Sauce
This surprisingly easy fish dish can be on the table in under 30 minutes. You can prepare the creamy low-fat parsley sauce while the fish is baking in the oven.
