Could Carbs Make Our Blood Fat?

 There has been a ton of confusion in recent years about saturated fats in our diets.  For a long time we were assured that they were associated with heart disease and other bad health outcomes.  But the research wasn't bearing that out - a lot of them time, people who ate more than the recommended amounts of saturated fat didn't seem to have worse outcomes (particularly if carbs were low).  This latest research may have the answer - the problematic fats may be in the blood, not the diet....because our bodies make them...from carbohydrate!  Have a healthy week!  Laura

This is absolutely fascinating research where people were given diets with increasing amounts of carbohydrate and less saturated fats, and carefully monitored.  The more carb and less fat they ate, the more bad fats their bodies made.
