    Well, it's been a long summer, and it still seems to be going on in a lot of places. But it's getting darker earlier and the evenings where I am are starting to get a bit nippy -- which is very welcome! Now I want dinners from the oven -- casseroles, lasagna, and other goodies that fill the house with appetizing fragrances. Have a wonderful weekend - Laura

    Low-Carb Tamale Pie
    This version of tamale pie has only 6.5 grams effective carbohydrate per serving, but all of the flavor of regular tamale pie.

    Unstuffed Cabbage
    All the flavors of stuffed cabbage, but none of the having to stuff each leaf.

    Low-Carb Tetrazinni (Chicken or Turkey)
    This recipes uses spaghetti squash or shirataki noodles to substitute for regular spaghetti. This is comfort food in our house.

    Zucchini Lasagna
    Surprisingly easy to put together. If you've had trouble with vegetable-based lasagnas being too soupy, check out my trick for correcting this problem.
