Breakfast during the week is a rushed affair -- it's usually a bowl of cold cereal and milk; but sometimes it's a bowl of instant oatmeal. When it's the weekend, however, it's nice to get up a bit later than usual and make some waffles or pancakes.

Baked Blueberry French Toast
This yummy baked French toast recipe can be prepared the night before so all you have to do in the morning is heat the oven and bake it. Whole grain bread and egg substitute make this French toast healthier than traditional French toast recipes.

Belgian Waffles
Moving from things French to things Belgian, here's a low fat recipe for Belgian waffles. Top these delicious waffles with warmed maple syrup and fresh fruit.

Banana Pancakes
My girls would eat pancakes for dinner most days if I let them. Their favorite kind are these fluffy banana pancakes, which are especially good topped with sliced bananas and maple syrup. For a more decadent taste, you could drizzle either chocolate or caramel syrup on top of the sliced bananas.

Whole Wheat Pancakes
Now my favorite pancakes are these whole wheat pancakes, which have a little added fiber. Enjoy them as plain pancakes topped with syrup or a fruit compote, or add a cup of your favorite chopped fruit or berries to the mix.
