Happy spring! Perhaps the weather is still lousy where you live and maybe even snowy, but spring has officially begun. The cherry blossom is out where I live and spring bulbs are blooming. Next week is Passover, followed not long after by Easter. So this week, I have a few recipes that would be suitable for both.

Asparagus Frittata
Make the most of seasonal asparagus in this yummy frittata, which is lightened by the use of egg whites as well as whole eggs. This spring brunch recipe would be perfect on Easter morning.

Halibut with Basil and Tomatoes
This halibut dish is ideal for either Passover or Easter, depending which one you observe. Halibut is a mild and meaty fish which goes well with pretty much anything. It can be expensive, so feel free to use another firm white fish until the price comes down a bit.

Simple Herbed Roast Chicken
Sometimes the simplest recipes are the most delicious, and I feel that a simple, succulent roast chicken is one of those. again, this is perfect for either Passover or Easter.

Lemon Bars
Lemon bars are about the only dessert I would choose over anything made with chocolate. These moist and tangy little bars are just the right size for a sweet treat.
