One holiday that's been a bit of a mystery to me is St. Patrick's Day. I never understood why it was so widely celebrated. Then I lived in New York for a few years and encountered a large number of Irish Americans who were loud and proud about their heritage. New York was indeed a sea of green each March 17th, with a huge parade and plenty of green-tinted food offered in stores and by food carts, and an unending flow of Guinness in the bars. So unleash your inner Irish and cook up a storm this St. Patrick's Day with some of these lightened Irish-inspired favorites

St. Patrick's Day Recipes
My favorite recipe here is probably the one for fruit-studded soda bread, but I also love the one for spinach soup, especially for its bright green hue.
