I'm a big fan of pork tenderloin. As much as it is still technically a red meat, despite the old marketing campaign by the pork industry, it is very lean and makes a nice alternative to chicken. So I kick off this week's newsletter with a simple but flavorful lemon-lime pork tenderloin.

Shrimp are not only low in fat and especially saturated fat, they're also quick and easy to cook. This makes them ideal for this stir fry, which can be ready in just minutes. Stir frying is a healthy way to cook because the high heat ensures the food is cooked quickly and without absorbing the oil.

Asparagus, Beet and Tomato Couscous
Colorful and healthy, this delicious picnic salad is one of my favorite salads. If you need this salad to be gluten free, then use quinoa or rice instead of the couscous.

Quinoa-Stuffed Peppers
Going meatless once or twice a week is a great way to cut back on fat. The good news is that this doesn't restrict you to flimsy salads. You can enjoy hearty, healthy and perfectly yummy meals without an ounce of meat.
