'Tis the season...and many of us tend to raise a glass a bit more than usual, especially on New Year's Eve.  Of course, there are many who do best with no alcohol at all, and keeping a limit on it is a good idea for all of us.  But for those who do drink alcohol, here are some guidelines for keeping it low-carb.  Also, most of my cocktail recipes are totally tasty without the liquor.  Happy New Year's - Laura

It's actually all about the sugar.  It's astonishing how much is in many cocktails, and even some wines.  Here is a guide for drinking alcohol on a low-carb diet.

How to Make Low-Carb Cocktails and Mixed Drinks
Did you know that liqueurs, such as amaretto and triple sec, can have as much as 24 grams of sugar in a jigger (3 Tablespoons)?  That's 6 teaspoons of sugar!  No wonder a cocktail like a margarita can easily deliver a quarter of a cup of sugar.  Here are some principles for making low-sugar or sugar-free mixed drinks and cocktails.

Homemade Cheese Spread
Do you have pieces of leftover cheese in your fridge? You can throw them into a food processor with a few other ingredients and make it into a nice spread! Or make them into that Southern favorite, Pimento Cheese. You can use either in lots of ways -- as a spread for vegetable slices, to stuff mushroom caps, as a burger topping, or the base for an instant cheese sauce.
