From Laura Dolson, your Guide to Low Carb Diets
Have you heard of so-called Paleo eating? It's basically a way of eating that emphasizes foods which humans were eating before we had agriculture -- no grains, sugars, or processed food -- sound familiar? There has truly been an explosion in the interest in Paleo eating in recent years, with a huge number of books, blogs, cookbooks, and gatherings appearing on the scene. Out of all this, some fascinating discussions are blossoming about the way we eat. This week I touch on some of this, and I intend to bring you more information soon. Have a great week - Laura

Paleo Eating Vs Low-Carb Eating
I have always considered paleo eating to be closely related to low-carb eating, because it's naturally low in carbohydrate, and I always figured that many of the benefits people find in paleo eating are due to this. Recently, though, some paleo writers have been resisting this association with low-carb eating. I touch on some of this controversy and offer a couple of thoughts of my own.

What to Eat on a Paleo Diet
Although there is no one conception of the "paleo diet" (and, indeed, what people ate during that time varied widely by geography), here are what many paleo authors recommend. See also this description of Paleo vs Modern Diets.

The Wonders of Olive Oil
Paleo eaters are very down on what they usually call "industrial seed oils" -- corn, soy, safflower, and usually canola oils. The thought is that the high omega-6 fat content in these oils is very detrimental, and unprecedented in our diets until very recently. One oil everyone agrees is great is olive oil, which has a spectacular array of properties that give health benefits.

Green Leafy Vegetables: Nutritional Powerhouses
A nutrition professor once told me that it was common for our ancient ancestors to eat up to six pounds of leaves per day. He imagined them walking along from one place to another, just picking and eating leaves as they went. Can you imagine eating a grocery bag full of greens each and every day? Few of us even eat the minimum USDA recommendations of 3 cups of dark green vegetables per week. And yet, these veggies deliver a bonanza of vitamins, minerals, and phytonutrients.
